A few months ago I started growing a few herbs in mason jars. I planted rosemary, parsley and spearmint just as something to do, but now my spearmint is growing out of control! My husband found a quick and easy way to use my mint- mint extract. It’s quick, easy and great to use for malts, cakes, cookies and tea. What do you like using mint extract for?
How to make mint extract:
- Pick and rinse mint leaves
- Rip/shred the leaves and put them in a clean jar with a lid that seals tight
- Cover the shredded mint leaves with vodka (use about 2-4 times as much vodka as mint)
- Put lid on and store jar in a cool, dark place for about a month. Shake the jar every few days.
